M. Kennedy, the ringleader of this NaBloPoMo business, has directed us post-addled writers to relax at the halfway mark. "Post something from Youtube!" she says blithely. Well, dear readers, I have something much better than that.

Mosey on over to Sarah and Sebastian’s fantastically clever site, The Pink of Perfection, for video footage of my tussle with Florence Fabricant’s Bison Steaks with Smoky Wild Rice.

Though the sound of my voice makes me want to crawl under a chair and never come out again, Sarah and Sebastian did an amazing job. And they’re awfully sweet, too.

    What fun to see you in action. And you have sold me on the need for a splatter guard! I note, though, that the recipe says to sear the meat in a cast iron skillet. As I’m sure you know (or maybe not, since you’re not a fan) Mark Bittman has made a big case for the use of cast iron pans, and there’s a clip in the NYT video archive that shows how you can use the oven for grilling, avoiding the splatter problem entirely. Of course you will want to be sure you have a self-cleaning oven! Maybe the splatter guard is a simpler solution.

    How cute are you, how cute was that video and how cute is that site? It’s a cute assault. And you really never yell at your dishes? “Absorb, rice! This is your last warning!” “Sauce, you NASTY. What did I ever do to you?!” Because that’s what a video of me cooking would be, and infinitely less charming.

    Also.. I’ve never had success with wild rice either. I just don’t get it. There have to be people out there who have sucessfully made it but how?

    That was awesome, Luisa! You are a natural on camera. I thoroughly enjoyed that. And Sarah did a fantastic job putting it all together. But I still wonder, aside from all the mishaps with the poorly written recipe, did it end up tasting good? Would you make it again?

    65 – the recipe actually doesn’t call for a cast-iron skillet, just for one that’s large and heavy. Since my stainless steel skillet is bigger than my cast-iron one, and those bison steaks were HUGE, I went with that.

    Sarah – don’t tempt me. That was so much fun!
    Gemma – hee. I’m not sure I really got your enthusiasm, though. Was there anything missing? 🙂
    Julie – eloquent or completely horrific 😉 Either way, that sauce was bad at first. Then, it got better.
    Deb – thank you so much. Um, and though I have never referred to anything in my kitchen as You Nasty, you can be sure will be doing so from now on. So thanks for that, too.
    Melissa – well, thank you, my dear! And yes, the splatter screen. I can’t recommend it enough (though, of course, you will still find yourself having to wipe down your stove after cooking, just maybe less…)

    Andrea – well, that makes me feel better because I couldn’t figure the wild rice out! I’ve had it cooked with regular rice and it’s been fine, but I guess alone it takes a loooooong time to cook. Too long for me.
    Tanna – yes! I wonder if splatter screen sales are just sky-rocketing today? 🙂
    Jimmi – perserverance, though I owe it all to Sarah. Had it just been me and Ben, we’d have been eating steak, unadorned.
    Brett – thank you, thank you. I absolutely adored the bison and I can’t wait to make those steaks again and also try out some ground bison, but the rest of the recipe? No, it was too fussy and stressful. That bacon-rice-pomegranate business was not my favorite. If you’d like the recipe, I’ll send it to you, just let me know.

    (I think that sometimes newspapers do not have time to test a recipe before it goes to print. And many chefs do not have “Home Kitchen” measurements on hand.)
